Overnight Chocolate Chia Pudding
This is a firm favourite of mine and I play with making this in batches and swapping things in and out all the time. Feel free to adjust the number of chia seeds for your taste. I found this amount has it set without being totally solid or runny.
- 1/2 cup Dairy-free Milk
- 1/2 cup Coconut Milk
- 1 TB Almond Butter (or any nut butter)
- 2 TB Maple Syrup/Honey
- 1 TB Cocoa Powder (I use raw cacao)
- 1 TB Protein Powder (optional)
- 1 tsp Vanilla Essence
- 1/3 cup Chia Seeds
Blend all the ingredients together. Scrape down the bowl and pulse.
After a couple of minutes, the chia seeds will start to absorb some liquid, pulse a few more times before transferring to glass tumblers/ramekins.
Try adding in 1/2 cup frozen cherries/raisins/sunflower seeds.
