Mindful Chef

Hi folks,

You know I am big into food (doesn’t everyone say that?) but I am more into where my food comes from and how it is prepared. This is something I was passionate about right through the 4 years of co-owning two organic grocery and whole food shops in Dundee and St Andrews. We looked at where the food came from, the farming and animal practices used, and favoured local produce and seasonal food.

I am delighted to say that I have been approached by Mindful Chef to be one of their ambassadors and for the last few weeks I have been cooking three of their recipes a week to mix up some of the food that I cook for Alan and I. I have never tried a food box programme before, having heard mixed reviews but I am so happy with theirs.

For the last 13 years, I’ve been an avid cook. I’ve cooked meals for myself but also for my partners. It’s how I show care, warmth, thought, and how I share my love. I love to know that they are eating well that can be something I can do. For the last 5 years, until recently, I was the co-founder of an organic food shop that specialised in local food, an accountable food chain, seasonal produce, and quality nutrition. Creating blog posts, recipes, smoothies, soup recipes, seasoning mixes was my everyday and talking to people in the shops was something I could do for hours. Since giving up my commitments at the shop because of my teaching schedule, I’ve felt a hole in my heart! Luckily, I feel inspired to create more content around food and have had more people asking lately about it and offering to support me through it. One of them is @mindfulchefuk who I have spoken with many times about their values and mine, which align so well! I am thrilled that they have asked me to be an ambassador for them as this meal is the first one that came through the door and I can’t be more thrilled about it! Even Alan, who can be a little fussy and occasionally critical, thought it was great. No waste. No fuss. Looking forward to tomorrow’s already! #mindfulchef #freerange #organic #local #shoplocal #eatlocal #ambassador #food #cooking #health #healthyeating #kiltedkitchen @onefeedstwo #recipebox

The dinners are delivered to your door in the form of fresh pre-portioned ingredients and matching recipe cards in an insulated cardboard box. You can choose to have a delivery once a week or even twice a week (perfect for those weeks you need an extra portion of your favourite recipes). They deliver nationwide on Sunday, Monday, Thursday and Friday.

You then cook the fresh ingredients at home following a simple step by step instructions on the recipe cards, which I am now collecting and using when I don’t have the box. All meals are designed to be cooked in under 30 minutes, some much less, and have a perfect portion size for a healthy lifestyle. The chefs handcraft new meals every week and the ingredients come straight from local independent award-winning family farms. We haven’t had such variety in ages! Also, when I am out of town, I can order some of the meals frozen for Alan to heat up!

As if it couldn’t get better, every time you purchase a Mindful Chef meal they donate a meal via One Feeds Two. The meals are provided in schools to children in the world’s poorest communities in Malawi to facilitate education. The meals are locally sourced, supporting local farmers. Since 2017, Mindful Ched has donated one million meals to these children.

So, sign up, give it a try, you can cancel anytime and they have a 100% satisfaction guarantee. I know you will love it as much as I have!
